Basic Breadcrumbs

Useful for many Sicilian dishes. Keep in refrigerator.

Breadcrumbs grated at home from stale Italian bread or bought in Italian delis (like Tori's) where they grate them from Italian bread. Do not buy prepackaged crumbs in the supermarket except for panko crumbs.

To about 4 cups of crumbs add three fourths cup of pecorino romano, finely chopped garlic to taste, about half cup minced parsley (fresh is best) salt (easy on that since cheese is salty) black pepper and chopped capers (salted type, not in water) Mix with your hands and store in plastic bag or containers in refrig. Can be used for meatballs, breaded cutlets (milanese) stuffed artichokes or peppers, broccoli balls, meatloaf or even right on top of pasta agli olio. Can be used for bread patties by just mixing with beaten eggs. Make a loose batter and drop into hot oil.
