Artichoke Quickie


When a quick fix is needed, this is a passable version of stuffed artichokes. It can be made quickly in a toaster oven.

1 14oz can artichoke hearts, 8 – 10 count
1/4 cup breadcrumbs (see recipe on this blog)
Olive oil
2 cloves garlic chopped finely
Chopped flat leaf parsley
Grated locatelli
Finely chopped capers
Salt
Pepper

Preheat toaster oven to 325ยบ. Drain artichoke hearts and slice in half lengthwise. Lay in single layer on toaster oven tray, cut side up. Sprinkle a generous layer of breadcrumbs on top of artichoke hearts. If the breadcrumb is not already seasoned, sprinkle last 6 ingredients on top. Drizzle a bit of olive oil over the top. Bake in toaster oven until hot and sizzling, about 10 minutes. Broil for a few minutes to crisp up the breadcrumb a bit.
