Purple Soup

1 head red kale, cleaned and coarsely chopped
2 – 3 carrots, sliced thickly
2 – 3 ribs celery, sliced thickly
1 – 2 potatoes, cut into chunks
1 large onion, cut into chunks
4 cloves garlic, peeled and crushed
Water or chicken broth
1 small can chick peas
Lemon juice
Olive oil
Hot pepper flakes
Salt and pepper

Place first 6 ingredients in a large pot. Add water or chicken broth to just cover vegetables. Drizzle a bit of olive oil into the mix. Cook over medium until all vegetables are tender. Don’t be alarmed. The broth will be vividly purple. However, the kale will have turned green. Coincidence? No.

Drain small can of chick peas and add to the pot. Chick peas and kale are great together! Add a squirt of lemon juice and a shake or two of hot pepper flakes. Taste for salt and pepper.

Add small cooked pasta, if desired. Dine while listening to Prince, but please, no Barney.
