Aunt Marie's Moroccan Vegetable Ragout

1 tbsp. EVOO (extra virgin olive oil :-))
1 medium yellow onion, thinly sliced
3 inch cinnamon stick or 1/4 tsp. ground
1 1/2 tsp. ground cumin
2 cups peeled & diced medium sweet potatoes
1 can chick peas, drained & rinsed
1 14 oz. can diced tomatoes, with juice
12 cup pitted green Greek or Italian olives, drained
6 tbsp. orange juice
1 1/2 tsp. honey (optional)
1 cup water
2 cups lightly packed coarsely chopped kale leaves
Salt & pepper

-Cook onion in olive oil over medium high heat until browned, about 5 minutes.
-Add the cinnamon & cumin; cook about 1 minute; add the sweet potatoes, chickpeas, tomatoes, olives, orange juice, honey & water; bring to a boil.
-Reduce heat, simmer, covered, stirring occasionally, until the sweet potatoes are barely tender, about 15 minutes. Stir in the kale.
-Cover & continue cooking until the kale is softened, about 10 minutes. Season with sale & pepper to taste.
