Mom's Meatballs

1 lb. meatloaf mix ( that is, ground beef, pork and veal)
2 eggs
1/4 cup locatelli cheese
1/4 cup finely chopped Italian parsley
2-3 cloves chopped garlic
Salt and Pepper to taste
Seasoned breadcrumbs-enough to achieve desired constitency or 2 slices white bread soaked in a little milk, which produces a softer meatball than the breadcrumbs. Mixture should be very soft and moist. DO NOT use meat when it is cold- allow to sit out a little. You can add some hot water to make it softer.
Shape into small balls (golf ball size) and fry in olive oil over medium heat till brown on all sides. Add to spaghetti sauce to complete cooking.
